Martha Stewart's Macaroni and Cheese
I'm not kidding. This recipe IS to die for. I've doctored it to my family's tastes. The original recipe is HERE.
The Recipe:
Ingredients:
8 T butter
1/2 C flour
2 cans evaporated milk
2 1/2 C milk
2 tsp. salt
4 C grated cheddar
1 1/2 C grated pepper jack (I've also used horseradish cheddar and chipotle cheddar)
1/4 tsp. cayenne (optional, but is very nice)
16 oz. elbow macaroni
Grated parmesan
- Make roux with the butter and flour. Be patient, keep stirring and let the flour brown a bit.
- Add milk and bring to a boil. Boil 2 minutes, continuing to stir.
- Remove from heat and stir in cheeses and seasonings.
- Add pasta and mix thoroughly. Turn into buttered casserole dish. It can be refrigerated at this point.
- Bake at 350 for 30 minutes.
- Top with parmesan and a sprinkle of paprika for color.
