Martha Stewart's Macaroni and Cheese

I'm not kidding. This recipe IS to die for. I've doctored it to my family's tastes. The original recipe is HERE.

The Recipe:


8 T butter
1/2 C flour
2 cans evaporated milk
2 1/2 C milk
2 tsp. salt
4 C grated cheddar
1 1/2 C grated pepper jack (I've also used horseradish cheddar and chipotle cheddar)
1/4 tsp. cayenne (optional, but is very nice)
16 oz. elbow macaroni
Grated parmesan

  1. Make roux with the butter and flour. Be patient, keep stirring and let the flour brown a bit.
  2. Add milk and bring to a boil. Boil 2 minutes, continuing to stir.
  3. Remove from heat and stir in cheeses and seasonings.
  4. Add pasta and mix thoroughly. Turn into buttered casserole dish. It can be refrigerated at this point.
  5. Bake at 350 for 30 minutes.
  6. Top with parmesan and a sprinkle of paprika for color.
