More on prep

I've got some exciting news. I decided to prep for TWO meals today. You heard it here first!

Tonight is Potato soup which mostly involves peeling potatoes and combining things.

Tomorrow night is enchiladas. Since I took the ground beef from the freezer on Sunday, it's all thawed in the frig right now.

Here's the mind-boggling, earth-shaking news:

I'm going to brown the ground beef while I'm fixing the potato soup. Yes. I. Am. Tomorrow night it will essentially be a matter of combining the ingredients and baking.

Be still my heart.

Oh--and I'll make enough salad for TWO nights.

I think I've hit on something amazing here!
