Week Two: Monday (Day 4)

Tonight we'll have Jamaican Cubed Steaks, Sweet Potatoes, and Italian Blend veggies.

I started my prep last night by taking the steaks out of the freezer. This morning I cleaned the potatoes and got them started (crockpot), sliced the cubed steaks and marinated them in the jerk seasoning and olive oil.

Tonight all I'll have to do is pan fry the steaks and steam the veggies. Fast Food!

The Recipes:

Jamaican Jerk Seasoning (original recipe found HERE)

1 tsp. onion powder
2 tsp. thyme
1 tsp. parsley
1/4 tsp. ground cinnamon
1 tsp. black pepper
1/2 tsp cayenne
1 tsp. paprika
1/2 tsp. hot pepper flakes
1/4 tsp. cumin
1 T garlic powder
2 tsp. salt
2 tsp. sugar

Mix together all ingredients and store in glass jar. It keeps its flavor for over a month.

Use 1 to 1 1/2 tablespoons per pound of meat.

Jamaican Cubed Steaks



  • Combine the appropriate amount of seasoning (1 to 1 1/2 T per pound of meat) with equal amounts of olive oil.
  • Slice cubed steaks into strips and toss with oil seasoning. Let marinate several hours.
  • Pan fry to desired doneness. (Is doneness a word?) My husband offered to grill them.

Sweet Potatoes

  • Scrub outside of potatoes with brush. Don't dry them.
  • Prick all over with knife.
  • Load into crockpot set on high 4-6 hours.
  • Cooking times depends on how fat the potatoes are. I'm going to start mine early to make sure they're done! (ETA: Mine were done in FOUR hours.)

Italian Blend Vegetables (for those who DON'T have a microwave like me!)

  • Open bag.
  • Pour into pot.
  • Add a little water to the bottom.
  • Cook on medium heat until done.

Verdict:

Me: Yum, yum, yum. And yum.

Hubby: I suggested grilling. Just sayin'.
